Molasses Acorns - Coconut flour

It's day sixteen of the Christmas Countdown Cookie Advent Calendar for 2021. We are switching things up once again by doing a more simplistic cookie. Acorns, trees, wreaths, and poinsettias are the original Christmas decorations, to me anyway. They bring Christmas back to an original and simpler time... Instead of the fancy-dancy gold, silver, super expensive decorations, I enjoy bringing a simpler and more rustic touch to my Christmas.

These acorn cookies are super delicious. The molasses gives the cookies a rustic taste and chocolate sauce with sugar on top completes the look. I wanted to include a cookie that I thought would bring a rustic touch to the calendar.

Overall, I feel that Christmas has been made into a who can buy the most and spend the most on decorations to make everything 'perfect', but personally, I enjoy having a Christmas that has a beauty of rustic elegance. Meaning that the decorations aren't flashy and over the top. I wanted to include a small piece of my Christmas in the calendar.


Ingredients

1 cup coconut flour

4 Tbsp molasses

3/4 cup Turbinado sugar, Extra for dusting the top

1 egg

1/4 cup coconut oil - Room temp

Pinch of Kosher salt

Simple Chocolate Syrup for decorating the top


Instructions
  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. In a mixing bowl mix together the molasses, sugar, egg, and coconut oil.

  3. Slowly add in the coconut flour and salt. Make sure that everything is completely combined.

  4. Roll the dough out to the desired thickness. Anything in a cylindrical shape can be used to roll the dough out. You can also squish and press the dough out to the desired thickness

  5. Bake for 13 minutes or until golden brown.


Decorating
  1. I decorate the cookies while they are still warm. They do decorate nicely when they have cooled.

  2. Take a spoonful of chocolate syrup and pour it over the top half of the cookie.

3. Immediately after, take a pinch or two of Turbinado sugar and sprinkle it over the wet syrup. Most of the sugar will take on the color of the chocolate. That's okay because that is the look we are wanting!
