Thumbprint Ginger Pumpkin Cookies - Almond Flour

It's day six of the Christmas Countdown Cookie Advent Calendar for 2021. Who says that pumpkin is only a fall and Thanksgiving item? Not us! We like to have pumpkin and pumpkin pie right to Christmas.

I know that it looks a bit monochrome. With pumpkin in both the cookie itself and its decorative topping. It tastes just like a pumpkin pie.


The pumpkin sauce is rich with a nice bite of nutmeg. These cookies are such a treat and are so delious. The perfect filler when wanting something bite-sized and full of pumpkin.



Ingredients
Sauce

2/3cup canned pumpkin

1tsp ginger

1/2tsp grated nutmeg

1/3cup coconut cream

1/4tsp kosher salt

1/3cup Turbinado sugar


Cookie

3/4cup almond flour

1/4cup coconut flour

1/2cup sugar

1/2cup pumpkin

1Tbsp olive oil, extra light taste

1 1/2tsp ginger

Pinch of Kosher salt



Instructions

Start with making the sauce first, so it has plenty of time to chill and thicken before putting it on the cookies.


Once the sauce is made preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.


Sauce

Put everything but the sugar in a saucepan on medium-low heat for 3 minutes.


Add the sugar. Let simmer for about 5 minutes, stirring occasionally, then remove from heat.


Transfer to a bowl and put in the fridge to cool.


Cookies

Put the pumpkin, sugar, and olive oil in a mixing bowl and mix at low speed till everything is combined.


In a separate container put the flours, salt, and ginger. Slowly add the dry to the wet ingredients, pausing in-between each addition letting it become fully incorporated.


Once everything is fully incorporated. Scoop about 2-3Tbsp of the dough and roll it into a ball. Then take your thumb and press it into the dough leaving an indentation. You can

also use a small spoon, like a teaspoon if you prefer. The goal is to make a space or dent in the dough to hold the sauce. The cookies hold their shape, so don't worry about placing them too close together. Continue until either the dough is going or until the baking sheet is filled.


Bake the cookies for 12-15 minutes. I'd say until they're golden brown but the dough already is, lol. The cookies will be soft when they come out of the oven, but that's okay




Assembly

It is very easy


Carefully spoon some of the pumpkin sauce onto the cookie. Try and place it into the dent you made. Place as much or as little as you'd like
