Stocking Stuffers - Almond Flour

It's day seven of the Christmas Countdown Cookie Advent Calendar for 2021. Yesterday we made some pumpkin cookies. Today we are putting together jam and cookies for a pretty tasty combination! They are so tasty that we simply couldn't resist adding them to the countdown.


Makes: 1+ cookies depending on the sizes of the cookie cutters Best served: Fresh

Prep Time: 20 minutes Cook time: 8 minutes or until faintly golden brown



I know what you are thinking. Fruit and cookies? That it's cutting it pretty close to fruit cake, and we all know what fruit cake tastes like. Don't worry it tastes nothing like fruit cake. Sorry, all fruit cake lovers, I'll make a recipe for you one day.


The crunch of the cookie paired with the sweetness and tang of the jam is simply scrumptious.


For this recipe, you will need to make my sugar cookie dough and have some of your favorite jam or preserves.


Ingredients

Sugar cookie dough

Favorite jam or preserves


Instructions

Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.


Follow the Snowman sugar recipe until it says to roll out the dough.


Make sure that the dough is chilled. Roll out the dough, you can use any cookie cutter, but I like to use stockings for this recipe.


Cut out an even number of cookies, place half on the baking sheet. Then with a small cookie cutter cut out the center of the remaining cookies.


Then place those on the baking sheet and bake for 8 minutes


Assemble

Take the cookies with the center cut out and place them on top of the full cookies. Then take a spoonful of the jam and place that in the hole.


Continue with the rest of the cookies
