Mulling Spice Snowballs - Paleo! With almond flour

It's day twelve of the Christmas Countdown Cookie Advent Calendar for 2021. Back to the snowballs, but this time it's mulling spice! What exactly is mulling spice? Well, an easy way to explain it is a bunch of spices typically used to flavor apple cider. While some might consider this to be a fall cookie, we prefer it in the winter.

My daughter's favorite spice cookie is this one. It has the perfect combination of sugar, spice, and crunch. The spices give the cookie a warmth that easily combats the winter's brisk air. It is a moist nutty cookie, and did I mention that there is spice? The cookie pairs beautifully with a glass of hot apple cider, a traditional glass of cold milk, and a simple black tea.


With three different variations, it will no doubt be a cookie that the whole family will enjoy!



Ingredients

1/2 cup EVOO, Extra Virgin Olive Oil

1/2 cup Turbinado sugar, extra to roll the dough in

1/2tsp orange zest

1 egg

1 cup almond flour

1/2 cup coconut flour

1/2tsp ginger

1/2tsp cloves

1/2tsp cinnamon

1/4tsp nutmeg

1/4tsp kosher salt

1/8tsp cracked black pepper


Optional: 1/2 cup - 1 cup of chopped pecans


Instructions
  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper

  2. In a mixing bowl beat together the EVOO, sugar, orange zest, and egg, about 2-3 minutes. We want this to be completely mixed and to be slightly frothy.

  3. In a separate bowl mix together the flours, spices, and seasonings. At a low speed, slowly add the dry ingredients to the wet ingredients. Scrape the side of the wet ingredients bowl, to make sure that the ingredients are fully incorporated. Optional: Add the pecans and mix in.

  4. Scoop 2Tbsp and shape into a ball.

  5. Optional: Take the extra sugar and roll the cookie dough balls in it.

  6. Place the cookies on the baking sheet about an inch apart

  7. Bake for 10 minutes or until golden brown.

  8. Transfer to a heat-safe plate to cool. These cookies will fall apart on a cooling tray.

  9. Enjoy!
