It's day eight of the Christmas Countdown Cookie Advent Calendar for 2021. It's the eighth of December and by now the fact that summer and fall are over has settled in. To celebrate that the start of winter is creeping up, we are making snowballs! Cookies that is... snowball cookies.

Snowballs are one of the first things that just about anyone does with the snow. Snowball fights are one of the best things to do and one of the most spontaneous. All it requires is a little bit of snow. Now that December is here, we northerners already have a pretty good amount of it. Everyone else though not so much. These snowball cookies are our way of sharing the fun. We don't recommend throwing them!
Shaped into spheres, these snowball cookies have a piece of fudge hidden inside. They are melt-in-your-mouth delicious and the fudge is rich and thick.
Ingredients
3/4cup coconut oil
1/2cup sugar
1 cup coconut flour
1tsp arrowroot powder
1/2cup water
1/2cup coconut sweetened condensed milk
Pinch of salt
Powder sugar for dusting the top of the cookies
Instructions
Follow the recipe for fudge
Mix together the coconut oil, coconut sweetened condensed milk, and sugar in a bowl. Mix together the dry ingredients in a separate bowl.
Alternate adding the water and dry ingredients to the wet ingredients. The dough will be crumbly. Put it in the fridge for about 30 minutes
Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
Take a piece of fudge and roll it into a ball, the bigger the piece of fudge the bigger the cookie.
Next, take some of the cookie dough and press it around the fudge ball. It might be easier to roll and press the dough around the fudge ball.
Continue with the rest of the fudge and cookie dough.
Bake them for 12 minutes or until the bottoms of the cookie are faintly golden brown.
Take the cookies off the sheet and place them on a plate. These cookies don't need a cooling tray.
Dust some powdered sugar on the tops of the cookies if preferred. Let's be honest, who wouldn't want a tiny bit of powdered sugar on top. :)
