Chicken Grape Salad - Homemade Mayonnaise, Corn-Free

Prep Time: about 15 minutes Cook Time: 0 minutes Makes: about 8 servings


This is such a refreshing and amazing salad. On a hot summer day this is the go-to, since we have food allergies and can't eat potatoes, we eat this instead of potato salad. I like to prepare this, a couple days ahead and stick it in the fridge because the next day it is even better. This does taste great if made on the same day.


Ingredients

3lbs of cooked chicken*

1 cup Mayonnaise

2Tbsp of Dijon mustard

1tsp of ground mustard

1 small onion chopped

2 cups of chopped celery

2 cups of cut broccoli

2 cups grapes, quartered

Salt and pepper to taste


Optional: adding some chopped nuts will add an additional crunch and texture to the salad. Adding more mayonnaise will make it a creamier texture like found in potato salad.


Instructions
  1. Roughly chop or cut chicken and put in a large bowl

  2. Cut the vegetables and grapes then add those the large bowl as well

  3. Now add the seasonings, mayonnaise, and mustard.

  4. Mix well
